Coagulants with no emulsifying agents

JS Nigari series

Lineup includes “JS Nigari Okinawa,” a kind of crude seawater magnesium chloride, and “JS Nigari N70,” a kind of magnesium chloride. They don’t come with emulsifying agents, so excess shearing is not required for coagulation. With Silent Core, tofu is made easily with delicate coagulation and maximized natural flavor and aroma of soy beans.
